The name “Uniku” which in Sicilian dialect means “the little one”, is a sweet wine unique in its kind, created to enhance even more the properties of a vine such as the typical frappato of our lands, which, for the exclusive exposure of our vines is capable to express the potential of all flavors and fragrances of the cherries and other red berry fruits.

  • APPELLATION OF ORIGIN: I.G.T. Terre Siciliane.
  • TYPE OF WINE: Red.
  • GRAPE SOURCE: Licodia Eubea (CT).
  • VARIETAL: 100% Frappato.
  • VINEYARD YEAR: 1995.
  • YIELD PER HECTARE: 30 quintals.
  • CULTIVATION SYSTEM: Espallier.
  • PLANTING DENSITY: 4000 / 5000 plants per hectare.
  • HARVEST PERIOD: 2nd / 3rd decade of September followed by sun ripening over rush matting.
  • VINIFICATION: In red with skin an d grapes maceration 25 days.
  • FERMENTATION TANKS: Stainless-steel 1.000 liters.
  • FERMENTATION TEMPERATURE: 15° / 20°C.
  • AGEING: 25 days over skin.
  • BOTTLING PERIOD: End of February.
  • MACERATION PERIOD: Refining for 3 mounts temperature 15°C.
  • ALCOHOL CONTENT: 12% vol.
  • AGEING CAPAClTY: Extended - like all sweet wines.

  • MICROCLIMATE: Rainy winters moderate temperatures, and dry hot summers.
  • SOIL: Medium texture soil tending to compact, interspersed whit limy tufa.
ORGANOLECTIC PROFILE
  • COLOR: Deep ruby red.
  • BOUQUET: Delicate, persistent intense with signs of wood fruit just pickedharmonic.
  • TASTE: Sweet with equilibrium among the sour and alcoholic component.
  • SERVING TEMPERATURE: 12- 15°C.
  • FOOD TO PAIR WITH: Pineapple, ice-cream with fruit, dries biscuits.
